VIVO REVOLUTIONISES pastry and cake–making

A group of passionate bakers from different industries — hotels, cafes, home bakers — recently gathered at Blessed Cake Design Centre, Kuching on February 26 for a live baking demonstration.

As the crowd focused their eyes on the pastry chefs, they gleefully welcomed the sweet experience and presented their taste buds for a sweet adventure.

The event was organised by SUPREME Food Supply (M) Sdn Bhd, the sole distributor for Vivo products.

The company was introducing a new and innovative product called Vivo, which can be used to enhance and simplify baking process.

During the demo, Pastry Chef Ivan Liew who is the research and development (R&D) brand application specialist for Fuji Oil Group, Singapore demonstrated how to use the products to create extraordinary desserts.

He was flanked by a team of bakers, comprising pastry chefs from Singapore, Japan and Vietnam.

Together, they created a cookbook by Vivo, consisting recipes originally created by the team.

By using Vivo products such as its ‘Toping Ace EST’, compound cream, ‘Palfy 780LTU’, ‘Classico 360LT’, dark chocolate, dark compound chocolate and white compound chocolate, Chef Ivan successfully created the following recipes — Zesty Orange Mousseline, HeiZel Chocolate bar and Raspberry Madeleine.

The chefs also gave out samples of nutty chocolate cookies, Gâteau au Chocolat, caramel sand galette, masala chicken pie and black sesame layered baguette made by Vivo baked products.

Chef Ivan was assisted by Chef Le Thanh Tung who decorated the cakes as part of the demonstration.

He has decades of experience in decorating cakes specialising in topping cream and chocolate.

Significantly, he is a cake decorator specialist for Fuji Oil in Vietnam and throughout Southeast Asia.

On the contrary, Chef Ivan has been in the baking industry for two decades working at various reputable establishments in Singapore.

As a pastry chef, he constantly experimented with new flavours, ingredients and techniques to create visually stunning desserts.

He specialises in French pastry and cake making, incorporating the use of high-quality ingredients, and attention to detail in his admirable pastry and cakemaking craft.
