Just opened this spring, the “Sabero” restaurant in Roermond has already secured two stars in the latest edition of the Red Guide to Dutch cuisine. The Michelin Guide Netherlands gains another new two-star restaurant with “Pure C” in Cadzand.

A stone’s throw from the German border, “Sabero” takes diners on a culinary voyage to Japanese-inspired lands, with saké, edamame beans, eel, ponzu and oyster leaves. In a different style, chef Syrco Bakker’s “Pure C” restaurant also gets a two-star rating for its skillful combination of treasures from the sea and the polders, the reclaimed land characteristic of the Dutch landscape. Here, “… dishes display a rare magnetic quality with a taste experience that is deliciously disconcerting,” according to Michelin.

While there are no new additions to the Dutch list of three-star restaurants — which remains at three (“De Librije” in Zwolle, “Inter Scaldes” in Kruiningen and “De Leest” in Vaassen) — Michelin notes the striking rise of a promising new generation of talented chefs. Indeed, 12 restaurants were awarded a first star in the 2019 edition of the guide, including Richard Van Oostenbrugge and Thomas Groot’s Restaurant 212 in Amsterdam.
